2 - 3 tbsp. agave nectar or other liquid sweetener
1 tsp cinnamon, plus extra
pinch nutmeg
salt
⅓ c + 1 tbsp. coconut sugar (or brown sugar)
¾ c old fashion oats
½ c white whole wheat flour (AP or regular wheat flour will work)
4 tbsp. melted coconut oil or vegan butter (regular butter will work, but then it's not vegan obviously)
Instructions
Preheat oven to 350 degrees F. Spritz and 8 x 8 inch square glass baking dish with nonstick spray.
Toss together the apple, agave, 1 tsp cinnamon, a pinch of salt, and a pinch of nutmeg in a medium bowl. Using a slotted spoon, transfer to the prepared dish.
Wipe out the bowl and add the sugar, another pinch of salt, oats, flour, coconut oil, and a dash of cinnamon. Mix with a fork or spoon until all of the ingredients look slightly wet. Sprinkle the topping over the apples.
Bake for 40 minutes, until the apples are bubbly and the top is lightly browned. Serve hot and store any leftovers in the fridge.
