I’ll be honest — I have no idea what pudding rice is. This might be UK vs American English at work (when I tried to Google it, I could only find recipes for rice pudding). If you already have a slow cooker recipe you like with pudding rice, I would recommend just swapping in the brown sugar, cinnamon, and bananas for whatever other sweeteners/flavorings are added to that recipe.

If you have a large slow cooker, yes feel free to double! Mine is one of the smaller sizes, so it would definitely overflow if I tried to add all of those ingredients.
