(Shameful, I usually don’t do that!) I used whole wheat pastry flour. Also, I only ever have old fashioned oats and I happened to have some leftover oat flour (old fashioned oats I ran through my blender; so easy!) so I used that instead of the whole quick oats. The pancakes came out absolutely amazing!! Thank you so much for sharing! I have a three year old son with disabilities that is on a high caloric diet (because of low weight and trouble eating). He LOVES these! The peanut butter maple syrup is an awesome way to add healthy calories to the dish. Thank you for sharing!!

You don’t get much of the oatmeal texture, it just helps provide a nice thick pancake and a little taste. The longer you let the batter rest, the softer the oats will get and you won’t even know they’re there.

Or you can just make the PB syrup and pour it over everything else in your kitchen (highly recommended!)

Eggs aren’t something I like to cook with often– I find them a little creepy and can find a substitute that tastes better 99% of the time. I believe all of the recipes I currently have posted, except the meatless meatloaf, are egg free– including the french toast 🙂
