Super Soft Banana Bread Cookies (Vegan, GF)

Ingredients
  • 2 very ripe bananas
  • ½ c maple syrup
  • 1 tsp vanilla extract
  • 1 c oat flour
  • ¾ c quick oats
  • 1 tsp baking powder
  • 1 tbsp cornstarch
  • ¼ tsp cinnamon
  • dash nutmeg (optional)
  • ½ c semi sweet chocolate chips (or nuts)
Instructions
  1. Preheat oven to 350°F. Spritz a baking sheet with nonstick spray, or line with parchment paper.
  2. Mash bananas very well. Add syrup and vanilla, mix until well combined.
  3. Add the remaining ingredients, except for chips. Mix until well combined – dough will be a little wetter than your typical cookie.
  4. Stir in chips (or nuts).
  5. Drop onto a cookie sheet.
  6. Bake for 11 minutes or until the tops look set.
  7. Let cool at least 5 – 10 minutes on a baking sheet before serving.
Notes
No oat flour? Run some quick oats through a food processor until you achieve a flour-like texture. Measure 1 c after processing. Nutritional info is with semi sweet chocolate chips. The count varied by ~20 calories/cookie based on the type of chocolate, so I would recommend figuring this out with your specific ingredients if you're counting calories.
