1 tsp butter extract (or other extract, but you'll lose the buttery flavor)
1 tsp vanilla extract
¾ c unsweetened almond milk (or other milk choice. Can use buttermilk and omit lemon juice)
1 tbsp lemon juice
2 apples, peeled if desired and diced
2 tbsp brown sugar
1 tbsp flour of choice
½ tbsp cinnamon
¼ c pecans, optional
Instructions
Preheat oven to 350°F and prepare a 9”x9” baking pan with nonstick spray.
Whisk pastry flour, baking soda, baking powder, and salt in a medium bowl.
In a second bowl, whisk the sugar, apple sauce, syrup, flax, water, and extracts.
Stir milk and lemon juice in a third bowl and let sit for a few minutes (this creates a "buttermilk" like mixture)
In yet another bowl, toss the diced apples with sugar, flour, cinnamon and pecans (if using).
Add the flour mixture and milk mixture to the sugar mixture, alternating between the two (starting and ending with the flour mixture). Stir until just combined.
Pour ~half of the batter into the pan. Cover in half of the apple mixture, top with remaining batter and finish with the last of the apple mixture.
Bake for 25 – 30 minutes, until a toothpick comes out clean.
