Vegan Peanut Butter Cookies with Agave

Serves: 24 cookies
- 1 c creamy natural peanut butter
- ½ c turbinado sugar or brown sugar, plus extra for sprinkling
- ¼ c agave nectar
- 2 tsp vanilla extract
- 1 c white whole wheat flour
- ½ tsp baking soda
- pinch salt (if your peanut butter isn't salted)
- Preheat your oven to 350 degrees F and line 2 baking sheets with parchment paper.
- Mix together the peanut butter, sugar, and agave nectar. Add vanilla extract and stir until incorporated.
- Add the flour, baking soda, and salt to the same bowl and mix until just combined.
- Gently roll into about 24 balls and space about 2 inches apart on the baking sheets.
- Press the balls with a fork to get the iconic peanut butter cookie shape. Sprinkle with sugar, if desired.
- Bake for 7 - 9 minutes. Remove from oven and let cool for at least 5 minutes before removing (or they will be extra fragile).
