Honey Whipped Feta

Ingredients
  • 12 oz crumbled feta
  • 8 oz low fat cream cheese (room temp)
  • 4 tbsp honey + extra
  • ½ tsp vanilla
  • ¼ c Roasted Salted Almonds, crushed (roughly chop with a knife or give a few pulses in a food processor)
For serving: toasted slices of crusty bread, apple slices
    Instructions
    1. In a food processor, finely pulse the crumbled feta. Add the cream cheese, 4 tbsp honey, and the vanilla and blend until smooth (took me about 5 minutes off and on).
    2. If you're not serving that day, stick it in the fridge. Let it warm to room temp before serving.
    3. To serve, transfer the whipped feta to a bowl or plate. Drizzle with honey and top with crushed almonds. Serve with toasted slices of crusty bread and apple slices.
    Notes
    For the crusty bread, I drizzle mine with EVOO and pop in the oven at 400 for a few minutes. I've also found store-bought crackers and toasted bread that would work great if you don't want to turn on the oven or want something that will travel easier.
