Loaded Turkey, Avocado, and Mushroom Sandwich + Lightlife Giveaway

Ingredients
  • 1 ripe avocado
  • 1 tsp lemon juice
  • 8 oz baby bella mushrooms
  • Lightlife Smart Deli Turkey
  • Tomato, sliced
  • Slices of smoked provolone or other smoked cheese (Vegan option: Daiya Smoked Gouda)
  • Sprouts
  • 6 slices of hearty, multigrain bread
  • Mayo, optional
  • salt
  • pepper
Instructions
  1. Mash the avocado and mix with lemon juice and a sprinkle of salt and pepper. Set aside.
  2. Slice the mushrooms and saute in a pan over medium heat spritzed with nonstick spray (or a little water). Add salt and pepper, to taste.
  3. Spread the mashed avocado on 3 slices of bread (I used ⅓ of the mixture on each). Top with mushrooms, turkey, cheese, tomato, and sprouts. If desired, spread the remaining slices of bread with mayo (or your other favorite condiments) and top the sandwich with it.
  4. Enjoy!
Notes
Nutritional estimate not included -- this will vary greatly on what kind of bread you use and how much of each topping you put on your sandwich. How much tomato and cheese to put on your sandwich is a very personal decision ;-)
