Caramelized Onion Dip

Ingredients
  • 1 large sweet onion
  • Extra virgin olive oil or butter
  • ½ - 1 c sour cream
  • ¼ c mayo
  • 6 oz Greek yogurt
  • ½ tsp Worcestershire sauce (vegetarian)
  • Salt and Pepper
Instructions
  1. Chop your onions and preheat a pan over low heat.
  2. Melt butter in the pan or swirl in a little EVOO. Add the onions and saute low and slow until they develop a deep brown color and taste slightly sweet. Add water if the onions dry out and to prevent sticking (and to get those good bits unstuck). This took me a good hour at an extra low temp.
  3. Remove the onions from heat and allow to cool.
  4. Stir in the sour cream, mayo, yogurt, and Worcestershire sauce. If you plan on serving immediately, add only ½ c sour cream. If you have the luxury of a little extra time, stir in the full amount and refrigerate to allow the flavors to really meld. Taste and add salt/pepper based on your preferences.
  5. If you don't want onion pieces in your dip, blend in a food processor prior to refrigerating until your desired consistency is reached.
  6. Serve with potato chips, carrot sticks, celery, anything you can scoop this tasty dip up with!
Notes
