Waffle Tacos

Ingredients
  • 4 eggs or tofu scramble (Such as this one, see note)
  • 1 recipe whole wheat waffles , prepared (4 waffles)
  • salt
  • pepper
  • hot sauce, optional
  • cheese (or vegan cheese, such as Daiya or a sprinkle of nutritional yeast)
  • Pure maple syrup
  • Optional: veggie bacon or sausage (you could use real bacon/sausage if that fits your interests)
Instructions
  1. Heat a skilled over medium, low heat.
  2. Crack the eggs in a bowl hisk the eggs until sufficiently scrambled. Season with salt and pepper to taste and a few splashed of hot sauce, if desired.
  3. Spritz the skillet with nonstick spray. Pour the eggs in and whisk. I recommend whisking throughout cooking to keep them light and fluffy in the tacos, but you can prepare the eggs anyway you prefer, as long as they are safely cooked through.
  4. Split the eggs across the 4 waffles, layering down the center of one of the waffle's seems. Sprinkle with cheese, drizzle with syrup, and top with your breakfast meat substitute, if desired.
  5. Fold and eat like a taco.
Notes
If making the linked tofu scramble, leave out the veggies. That recipe already contains hot sauce, so you can skip in the recipe.
Prep time estimate includes time to cook the waffles, but you can cook those alongside the eggs. I'd cook 2 waffles before adding the eggs to the pan to time it just right.
