Sun dried Tomato Bread (Whole Wheat)

Ingredients
  • 1 ¾ c warm water
  • 4⅓ c white whole wheat flour
  • 1 tbsp vital wheat gluten
  • 2 tsp salt
  • 2 tsp sugar (you can use granulated, honey, agave -- anything except no calorie substitutes)
  • ½ tbsp dry active yeast
  • 1 tbsp extra virgin olive oil (see note)
  • ½ c chopped sun dried tomatoes
  • 2 tbsp. nutritional yeast or fresh grated parmesan
  • ½ tbsp dried basil or Italian seasoning
Instructions
  1. Combine all ingredients in a bread machine following the instructions for your particular model (for mine it's water first, then flour, then all other ingredients on top as long as the salt and yeast do not touch).
  2. Select a medium crust, whole wheat (if an available option), and 1.5 lb loaf.
  3. Let your machine do it's thing and come back to a delicious loaf!
Notes
I prefer to use vacuum packed sun dried tomatoes. If you use oil-packed, shake off excess oil and omit additional oil.
For a vegan recipe, use nutritional yeast instead of parmesan and opt for a sweetener other than honey (many vegans do not consume honey).
If you prefer chunks of tomatoes in your bread instead of mostly blended into your bread: chop pieces into your desired size, turn on the "nuts" setting, and place in the nut container (in models that have this, it drops in during the last needing). If you do not have a nut setting, consult your owners manual to determine when the final knead cycle takes place and add just before.
