Oatmeal Breakfast Cookies

Ingredients
  • 1 banana, mashed
  • ½ c peanut butter
  • 1 c sweetened signature smash blend from MyOatmeal (see note)
  • ½ c white whole wheat flour, or any flour of choice
  • ½ tsp baking soda
  • 2 tbsp unsweetened almond milk, or milk of choice
Instructions
  1. Preheat oven to 350ºF and prepare a baking sheet with nonstick spray or parchment paper.
  2. Mash the banana and combine with the peanut butter, microwaving for 15 – 30 seconds at a time, if necessary, to thoroughly mix.
  3. In a separate bowl, combine oats, flour, and baking soda. Stir in peanut butter mixture and milk.
  4. Divide into 8 cookies – they will be sticky! Shape like hockey pucks, pressing the dough together to encourage sticking.
  5. Baking for 15 minutes.
  6. Let cool and enjoy! The variety of oats gives this a great texture!
Notes
If you don't have oats from myoatmeal, this will work with ½ c minus 1 tbsp of steel cut oats, ½ c minus 1 tbsp quick oats, and 2 tbsp flax. Sweeten to taste (as much sweetener as you would add if preparing the same amount of oatmeal). This will have more of a peanut butter and banana flavor, as there will be no additional flavoring from the oatmeal to fall back on. I recommend adding a scoop of flavored protein powder or a few shakes of cinnamon and nutmeg.
The flavor of this cookie can vary greatly based on which flavor you choose – I recommend graham cracker, cinnamon roll, chocolate hazelnut, or vanilla frosting.
If you don't have any mix-ins in your oatmeal, you can throw in some dried fruit or nuts. I loved the dried strawberries in this.
If you don't get your blend sweetened, add as much sweetener as you typically would to a cup of dry oatmeal – more if you want your cookie sweeter. I liked keeping this more oatmeal tasting than cookie.
