Apple Butter Pancakes

Ingredients
  • ½ c unsweetened almond milk (or milk of choice)
  • ½ c apple cider (see note)
  • ¾ c apple butter (see note)
  • 1 tbsp flax meal
  • 1 c white whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
Instructions
  1. Preheat a griddle to 300ºF or a nonstick pan to medium/low heat – spritz with nonstick spray just before using.
  2. Mix the milk and apple cider and allow to sit for about 5 minutes to sour like buttermilk.
  3. Add in the apple butter and flax meal. Let rest for another 5 minutes for the flax to gel slightly.
  4. Add the remaining ingredients and stir until just combined.
  5. Pour by quarter cups on to the griddle. Flip when the bottom is browned and bubbles appear on the wet surface of the pancake. Cook the other side for approximately 2 – 3 minutes, until cooked through.
  6. Serve with syrup, peanut butter, or more apple butter!
Notes
If you don't have apple cider, you can use apple juice seasoned with a few dashes of cinnamon and a light dash each of clove and nutmeg.
Don't be tempted to swap out the apple butter for applesauce. Apple butter is much thicker than apple sauce, so using applesauce would result in a more watery batter.
