Greek Yogurt + Avocado Ranch Dressing

September 11, 2015

Josh and I eat a ridiculous amount of Ranch dressing. Like, a scary amount. Almost as much Ranch as barbeque sauce, but let’s get real, I’d basically have to drink the stuff to consume more Ranch than barbeque sauce. Our brand of choice isn’t exactly the healthiest choice, but it just tastes so good.

None of the healthier brands or traditional recipes really quite match what we crave in a Ranch. Apparently there’s just something about the chemically taste of processed food we can’t get away from in this house. Since going right for the standard Ranch-iness wasn’t doing it for us, I’ve started aiming for flavored Ranch. I have to say, this definitely hits the spot when a craving hits.

We drizzled the dressing over veggie and bean tostadas the day I made it. I just quick sauteed whatever veggies were in the fridge with a little taco seasoning, then plopped them on top of a crispy corn tortilla smeared with smashed black beans. Definitely a quick and easy dinner that was a major winner in our house.

Ingredients
  • 1 avocado
  • 1 c vegetable broth (can use milk instead)
  • ¼ c Greek yogurt (I used nonfat)

  • 2 tbsp lemon juice

  • 1 tsp paprika
  • ¾ tsp salt
  • ¼ – ½ tsp ground black pepper

Instructions
  1. Cut the avocado into pieces.

Notes
If raw garlic is too assertive for your tastes, swap it out for 2 tsp garlic powder.

Yummy! I love ranch and could drink the stuff straight. This is a healthy spin that won’t make me feel bad when I drown my fries in ranch.

Haha, that is so funny that we both posted ranch dressing recipes!! Would it be the Hidden Valley one you are speaking of?! I’ve been putting my ranch on everything too lately and I’ve almost eaten the whole jar myself in 2 days!

I’m a ranch fiend, myself, and I love that you came up with a healthier version of it. Those tacos?! I want them for breakfast!
