Honey Whipped Feta

Summer seems to just be slipping away — I feel like it used to last forever when I was younger, and now I’m lucky to have maybe 2 of my favorite summer outings a year. Let’s not even talk about all of the adventures I’ve never even had yet (tubing lazily down a river? Yup, have the tubes in my garage but have never made it to a river!).

I was having friends over for a wine tasting over the weekend and wanted to feature foods that were a little more picnic-y because oh hey, picnics are another thing I just never manage to have time for. I’ve seen many a blog/instagram post featuring whipped feta on crostini with some kind of drizzle and some kind of fruit, but that seemed like way too much work when I already feel like my days are compressing into nothing. Instead, I sweetened the feta up just a touch more and served it as a dip. It went over even better as expected, especially because you can have an extra fruity bite without the bread, or an extra crunchy bite by scooping up more almonds. I have to say that when you pre-assemble crostini, the last few end up being the sad ones with hardly any toppings, and maybe someone like me even picked some of the toppings off.

If you’re a magician and can find time to take little adventures, A. I’m jealous — tell me where you’re going! and B. This would be great to snack on in the park. The beach? Probably not so much — who wants sandy feta? I made it a day ahead of time and it turned out fantastic; you’ll just need to let it come to room temp before serving and drizzling with honey.

Honey Whipped Feta

Ingredients
  • 12 oz crumbled feta
  • 8 oz low fat cream cheese (room temp)
  • 4 tbsp honey + extra
  • ½ tsp vanilla
  • ¼ c Roasted Salted Almonds, crushed (roughly chop with a knife or give a few pulses in a food processor)
For serving: toasted slices of crusty bread, apple slices

    Instructions
    1. In a food processor, finely pulse the crumbled feta. Add the cream cheese, 4 tbsp honey, and the vanilla and blend until smooth (took me about 5 minutes off and on).
    2. If you’re not serving that day, stick it in the fridge. Let it warm to room temp before serving.
    3. To serve, transfer the whipped feta to a bowl or plate. Drizzle with honey and top with crushed almonds. Serve with toasted slices of crusty bread and apple slices.

    Notes
    For the crusty bread, I drizzle mine with EVOO and pop in the oven at 400 for a few minutes. I’ve also found store-bought crackers and toasted bread that would work great if you don’t want to turn on the oven or want something that will travel easier.

      I love that you’re having friends over for a wine tasting this weekend. We might have to do the same sometime soon because we are not traveling anymore this summer. C’est la vie.

      And then this Honey Whipped Feta. What a brilliant idea! I love that you’ve done this, and I can see it going well on a picnic or an outdoor get together. And I want some of this now. Because of course I do!

      Whipped feta is amazing, but I love that you have added honey to it. What a great idea to dip apples in to it as well.

      I’m feeling kinda the opposite, like summer will never end, haha! I’m just ready for some nice weather to come! A wine party sounds like so much fun!! And this honey whipped feta is pretty perfect! I need to be throwing more wine and cheese parties 🙂
