Look at me, actually writing a post! I don’t know what’s with me lately. I would blame it on nice weather, but we haven’t really been having any of that. I’ll just call it burn out and exhaustion. I haven’t been wanting to cook lately or even do much other than lay down and fall asleep as soon as I get home. No joke, we’ve had PBJs, cheese sandwiches, and frozen pizza for dinner many, many times the last few weeks. Apparently sandwiches are the lazy girl’s dinner!

Perhaps I’m feeling lazy because I’m jealous of students getting out of school for the summer. I’ve had a bunch of busy weekends and two more busy weekends on deck — bachlorette party this weekend (!) and a wedding next weekend (!!) — followed by a weekend where I have to work. Needless to say, what I really want is a vacation. Which made me think of a recent cruise I took. We got one of the unlimited drink packages (I know!) and took a strong liking to a bar themed after a British pub right in the main walkway. One of the drinks there, a Cherry Orchard, quickly became my drink of choice and one of the bartenders my favorite person in the world. Every time we walked by the bar (which was often, it was in my main walkway), he would yell out “Hi Kelly!” wave really widely, and start making my drink. So, whether I was ready for another drink or not, I got one.

When I got home, I sadly had to take a break from my beloved Cherry Orchards, but luckily I took a picture of the ingredients list and my trusty bartender walked me through how to make them. Though I’ve made a couple of tweaks, this drink just screams vacation and summer. They’re not too strong, so it’s easy to sip on a few while grilling or just sitting out and enjoying the sunshine. You can make `em gluten free if you want, even.

Cherry Watermelon Beer Cocktail

Serves: 1 drink
 

Ingredients
  • 3 – 4 chunk watermelon
  • 3 pitted cherries (fresh or jarred, plus more for garnish)
  • ½ shot Chambord
  • 1 tsp cherry juice or cherry syrup (in a pinch, you can use liquid from jarred cherries)
  • Ice
  • 8 – 12 oz Apple ale, cider, or light summery beer

Instructions
  1. Add the watermelon, cherries, Chambord, and cherry juice to a glass. Muddle and top with ice and beer/cider.
  2. Garnish with additional cherries, if desired.

Notes
I like to use fresh cherries and Redd’s apple ale. A summery beer (like a lemon shandy) is also delicious as well as a crisp cider.

    Oh, sister, I.hear.you. There really is a lull that happens every year right around this time for me. It’s like we should all just take a vacation instead of pretending that we’re going to be our normal productive selves. Who the heck knows what it is, but I blame it on the heat slowing me down, ha!

    Having life burnout definitely doesn’t help with getting things done in the kitchen, I’ll tell you that much! But it definitely DOES make me want to drink. Love the sound of this! Perfect summer drink!
