Creamy Asiago and Spinach Dip

A couple of weeks ago we were hosting a game night and I put Josh in charge of snacks. He ran to the “fancy” party store and came back with some cheeses, a dip, crackers, and cookie chips (<– yes, those are as good as they sound). I don’t know if this says more about me or Josh, but he had thought about grabbing a creamy, cheesy dip we had never tried before and inevitably grabbed hummus instead because he didn’t want to disappoint me. First of all, cheese is rarely disappointing. But really, afraid I’d react so poorly to him doing me a favor that he didn’t want to go for a dip he found interesting? Not okay!

Being the kind, totally reasonable person I actually am, the next time I was at that store (coincidentally, before another game night), I made sure to find this dip for him! The ingredients were pretty non-offensive, so I’m really not sure what his fears were, but holy crap was it pricey! One bite of the precious cheesy goodness spread on a spinach cracker and we were hooked — I knew I needed to make a version at home so avoid spending $9 on a tiny tub of dip every game night.

This came together pretty easy with a little bit of fancy flare. If you have 10 minutes, you have more than enough time to mince the garlic, grate the cheese, and stir everything together. The original dip didn’t have spinach so feel free to omit if you have something against a little extra nutrition. I just had to add it after how delicious the store bought dip was on spinach crackers. For the two of us, we served it with carrot sticks and Blue Diamond Nut Thins — they’re a great cracker option in general, but some of the best GF crackers I’ve had!

Creamy Asiago and Spinach Dip

Serves: 2 c
 

Ingredients
  • 1 c shredded asiago cheese
  • 2 cloves garlic, very finely minced
  • ⅓ c mayo (I used an egg free mayo, any will work)
  • ⅔ c sour cream or ⅓ c sour cream + ⅓ c Greek yogurt (I used fat free)
  • 1 large handful spinach, chopped
  • Salt and pepper, to taste
  • Squeeze of lemon juice (less than 1 tsp)
  • Dash cayenne pepper

Instructions
  1. Stir all ingredients together in a bowl.
  2. Serve with veggie sticks or crackers. Can be served immediately or made ahead of time and stored in the fridge.

    I mean, I love creamy dips…but making them at home always ends up tasting better…and is cheaper!! Love this!

    You can never ever go wrong with a good cheese and spinach dip! I bet this would be awesome on a sandwich too!
