There’s very few times I feel deprived as a vegetarian. There’s a meat sub for this, a better version of that, so really there’s no reason to feel deprived. Until I see someone’s meaty sandwich stacked mile high. While I’m a HUGE fan of a cheese sandwich (like seriously cheese + mayo/mustard, maybe some lettuce or tomato if I’m feeling crazy), there’s just something so alluring about a sandwich you may need to unhinge your jaw to eat. I guess I could stack cheese a mile high, but I kind of like my arteries the way they are.

When Lightlife contacted me about their meat-free Smart Deli slices, I knew I wanted to create a HUGE sandwich. I’ve had the veggie turkey slices before, as well as the smart sausage and the tempeh, and I’m a big fan. With the deli slices, I get that jumbo sandwich I love, while eating a sandwich that’s better for me and better for the environment.

A warm element is always important for me in a meal — if everything is cold, I just don’t feel satisfied after. So I sauteed up some mushrooms and piled them on.  If you aren’t a weirdo like me, you can saute the mushrooms in advance or slice raw mushrooms and load your sandwich up. I would normally say you can add veggie bacon if you’re feeling fancy, but the smoked cheese already adds the perfect amount of smokiness. Loaded Turkey, Avocado, and Mushroom Sandwich + Lightlife Giveaway

Serves: 3 sandwiches
 

Ingredients
  • 1 ripe avocado
  • 1 tsp lemon juice
  • 8 oz baby bella mushrooms
  • Lightlife Smart Deli Turkey
  • Tomato, sliced
  • Slices of smoked provolone or other smoked cheese (Vegan option: Daiya Smoked Gouda)
  • Sprouts
  • 6 slices of hearty, multigrain bread
  • Mayo, optional
  • salt
  • pepper

Instructions
  1. Mash the avocado and mix with lemon juice and a sprinkle of salt and pepper. Set aside.
  2. Slice the mushrooms and saute in a pan over medium heat spritzed with nonstick spray (or a little water). Add salt and pepper, to taste.
  3. Spread the mashed avocado on 3 slices of bread (I used ⅓ of the mixture on each). Top with mushrooms, turkey, cheese, tomato, and sprouts. If desired, spread the remaining slices of bread with mayo (or your other favorite condiments) and top the sandwich with it.
  4. Enjoy!

Notes
Nutritional estimate not included — this will vary greatly on what kind of bread you use and how much of each topping you put on your sandwich. How much tomato and cheese to put on your sandwich is a very personal decision 😉

    As much as I love a cheese and mustard sandwich, I also love a sandwich that is stacked high with all kinds of goodness!! I’ve never tried any meat substitutes like this before, but that is one good looking sandwich! I’ll have to keep my eyes out for these turkey slices! Or maybe I will win some free ones 🙂

    Even though I eat meat, I’m in the same boat as you when it comes to the whole mile-high meat stack for which you have to un-hinge your jaw…just don’t get it, either. This sando is seriously making me salivate – those sauteed shroomages with that avocado?! Ugh, so freaking genius!

    It is true that we don’t get as many BIG-AS-YOUR-FACE sandwich options being veg. I’ll have to try out those Lightlife slices…maybe I won’t tell the.boy they’re meatless and see if he can tell. 😛
