Caramelized Onion Dip

Chipppieeesss and dippppieesss.  Two of my most favorite things. It’s weird to explain, but chip dip has always seemed so luxurious to me. Store bought onion dip has gelatin and the kind you make with soup mix usually has some kind of beef stock (and maybe gelatin, too), so it was a rarity when I would go to a party and realize I could eat the dip.

Don’t get me wrong, there’s no ill will between me and a handful of salty, dry/naked chips, but creamy dip just makes my heart sing. Then you get cool, oniony tang to go along with your crunchy salty goodness. Not that anything is really missing in good ole chip dip, but I thought the sweetness of caramelized onions would just make it next level stuff — and next level stuff it is.

I served this while I had friends over and I’m a little embarrassed to say I basically hoarded it. I plunked it down in front of myself and hit the bowl with the huge shiny chip bowl.  This was also my strategy for hiding my Star Munchkin hand <— and that’s the secret to success. If no one can see your hand, no one can tell that you’re ahead by 3 levels and are about to win the game. They also can’t see the dip is gone, so they can’t be mad you didn’t share. P.S. Caramelized Onion Dip

Serves: 2 c
 

Ingredients
  • 1 large sweet onion
  • Extra virgin olive oil or butter
  • ½ – 1 c sour cream
  • ¼ c mayo
  • 6 oz Greek yogurt
  • ½ tsp Worcestershire sauce (vegetarian)
  • Salt and Pepper

Instructions
  1. Chop your onions and preheat a pan over low heat.
  2. Melt butter in the pan or swirl in a little EVOO. Add the onions and saute low and slow until they develop a deep brown color and taste slightly sweet. Add water if the onions dry out and to prevent sticking (and to get those good bits unstuck). This took me a good hour at an extra low temp.
  3. Remove the onions from heat and allow to cool.
  4. Stir in the sour cream, mayo, yogurt, and Worcestershire sauce. If you plan on serving immediately, add only ½ c sour cream. If you have the luxury of a little extra time, stir in the full amount and refrigerate to allow the flavors to really meld. Taste and add salt/pepper based on your preferences.
  5. If you don’t want onion pieces in your dip, blend in a food processor prior to refrigerating until your desired consistency is reached.
  6. Serve with potato chips, carrot sticks, celery, anything you can scoop this tasty dip up with!

Notes
Nutritional estimate is for a realistic ¼ c serving. No skimpy portions here! The nutritional estimate assumes light mayo, light sour cream, and nonfat yogurt with 2 tsp olive oil and the full allotment of yogurt. If you use full fat everything, the dip will have about 125 calories.

    Chips and dips are my two favorite things to eat in the whole wide world too! I doesn’t get much better! I’ve always loved french onion dip but the storebought kind does seem a little gelatinous and strange. I love that you made your own! I bet it is so much better this way 🙂

    At least you had the decency to attempt to share with friends…I would have just hounded this whole thing myself! I love the flavor of caramelized onions, so I bet this dip is fan-freaking-tastic!! I need to get my chip n dip on! 😀

    I’m betting this is WAYYY better when you make it at home than the powder mix is. I mean, it has to be…it has REAL ONIONS IN IT. YUM.
