Smokey Almond and Cream Cheese Snacks

When I’m brunching or even just checking out brunch pictures on Instagram, I’m irrationally jealous of bagels and lox. I normally prefer sweet brunches (with a side of salty potatoes, please) but there’s something about bagels, cream cheese, and a variety of toppings (like lettuce!) that just intrigues me to no end.

When I tasted Blue Diamond’s Smokehouse almonds, I knew they’d be a great substitute for lox when paired with cream cheese. Is lox smokey? I reallllly have no idea, but I imagine it is. When crafting this snack, I opted for flatbread crackers (like the kind by Wasa) instead of bagels or even mini bagels because I wanted to keep them light and small. Also, because toasting enough bagels to feed a crowd seemed a little onerous — especially because we don’t have a toaster. But by swapping out for a lighter, less filling base you can eat more. Of this snack or anything else you put out for the big game.

Still hung up on the fact that we don’t have a toaster? I am too. I’ve been saying for literally four years that I need a toaster — we’ve been using the oven! If anyone has great toaster recommendations feel free to just send me one, because you know I’m never going to buy one myself at this point. Think of it as a 2 year blogiversary present (that was a few days ago, I missed it!) or a 15 year vegeversary present. Yup, 15 years! Smokey Almond and Cream Cheese Snacks

Ingredients
  • Smokehouse Almonds (or Wasabi & Soy Sauce Almonds for a kick!)
  • Cream cheese (regular, low fat, or vegan)
  • Flatbread crackers, mini bagels, or GF base
  • Optional toppings: lettuce, tomato, capers, red onion
  • Salt and Pepper

Instructions
  1. Break the crackers into snack size, if necessary, or toast your mini bagels.
  2. Spread with cream cheese and top with almonds (chopped if desired) and your favorite toppings (I liked mine with a half slice of tomato and a little lettuce). Sprinkle lightly with salt and pepper. Serving tip: Top with cream cheese and chopped almonds and leave a variety of toppings out so your guests can build their perfect bite. I liked switching it up between Smokehouse and Wasabi & Soy almonds so I’d get a nice kick!

    OMG. These sound AWESOME – and I love salty, smoky almonds – I am not vegetarian but I would still call this recipe superior to lox!!

    FIFTEEN YEARS vegeversary!! Girl, you deserve a round of applause. And/or a cookie. Love the idea of smoky almonds in place of lox…definitely a great substitution!
