Sun dried Tomato Bread (Whole Wheat)

I’m not sure what your kitchen looks like, but mine is packed and overflowing with various kitchen gadgets — many of which were either purchased for me or inherited.  That made this month’s Recipe Redux theme pretty complicated: treasured cookware, meaning something passed on to us from our favorite relatives.  It’s a rare, rare meal I make that doesn’t involve something from my Grandma’s kitchen, specifically her KitchenAid mixer or her bread machine.  I realized that I post recipes using my mixer often and have a shocking low amount of bread machine baking, considering I bake almost all of our own bread.

Sun dried Tomato Bread (Whole Wheat)

I remember the smell of freshly baking bread at my grandma’s house (and occasionally from my mom’s kitchen).  It didn’t happen all the time, but I loved a fresh, crusty loaf of bread more than pretty much anything, and my Grandma knew that.  In 4th grade, I had an allergic reaction to penicillin (either before or after my tonsillectomy, that time is a little fuzzy) and my grandma had to pick me up.  She already had pea soup going and started some bread in her bread machine special for me.  I have to say, it was definitely worth the polka dotty hive face in exchange for that bread.  (Side note: that’s the only time in my entire life that I’ve had pea soup).

This bread was also a little inspired by a build-your-own grilled cheese lunch I had at a friends house the other day.  We painted the outside of the bread with the oil from sun dried tomatoes, and it was insanely delicious.  I knew I could buy sun dried tomato bread at the store, but it was so easy and rewarding to make at home.  This bread is a little denser than store bought bread, mainly because it’s 100% whole wheat.  I like it a little heartier like this for making grilled cheese and croutons, but I don’t think it would be as good not toasted, at least for me.

Sun dried Tomato Bread (Whole Wheat)

Ingredients
  • 1 ¾ c warm water
  • 4⅓ c white whole wheat flour
  • 1 tbsp vital wheat gluten
  • 2 tsp salt
  • 2 tsp sugar (you can use granulated, honey, agave — anything except no calorie substitutes)
  • ½ tbsp dry active yeast
  • 1 tbsp extra virgin olive oil (see note)
  • ½ c chopped sun dried tomatoes
  • 2 tbsp. nutritional yeast or fresh grated parmesan
  • ½ tbsp dried basil or Italian seasoning

Instructions
  1. Combine all ingredients in a bread machine following the instructions for your particular model (for mine it’s water first, then flour, then all other ingredients on top as long as the salt and yeast do not touch).
  2. Select a medium crust, whole wheat (if an available option), and 1.5 lb loaf.
  3. Let your machine do it’s thing and come back to a delicious loaf!

Notes
I prefer to use vacuum packed sun dried tomatoes. If you use oil-packed, shake off excess oil and omit additional oil.
For a vegan recipe, use nutritional yeast instead of parmesan and opt for a sweetener other than honey (many vegans do not consume honey).
If you prefer chunks of tomatoes in your bread instead of mostly blended into your bread: chop pieces into your desired size, turn on the “nuts” setting, and place in the nut container (in models that have this, it drops in during the last needing). If you do not have a nut setting, consult your owners manual to determine when the final knead cycle takes place and add just before.

    I am so excited to see this recipe. I haven’t eaten in a Panera in years but I loved their tomato bread. This totally reminds me of it but healthier. I can’t wait to make this. It is going to make a fantastic sandwich.

      Christie– We eat at Panera probably more than we should (there’s limited dining out options in my small town, so it’s actually one of the better-for-you choices) but I’ve never tried their tomato bread! I’ll have to keep an eye out for it next time I’m there, since I know I loved this one.

    I love the sound of this bread with the sun-dried tomatoes! I make almost all of our own bread too (except for really really busy weeks) and am always looking for new recipes to try!

    I have a bread machine that I haven’t used in ages! This sun dried tomato bread (and whole wheat, no less!) sounds delicious!

    I don’t have a bread making machine but when I move to Chicago and have more space its going to be my first purchase!!! I love this savory looking bread. I stopped making bread about 6 months ago and both my bf and I lost weight. Guess We should treat ourselves!

    I’ve never seen sun-dried tomato bread at the store, but now I definitely have a hankering to try it! It’s so sweet that so much of what you cook and bake reminds you of your grandmother!

    Kelly, I super duper wish you were my neighbor and could bring me yummy samples of all of these delicious foods you make. I can’t stop thinking about this bread. I love a hearty bread … and with the sun dried tomatoes … come on now. I’m gonna need to make this asap! 🙂
