Light(er) and Boozy Shamrock Shake

Let’s reflect back 2 years, to the year when I got a sunburn on St Patrick’s day.  It was a glorious 70+ degree day in central Michigan and we sat out on my friend’s apartment’s lawn, enjoying the sunshine for hours with a couple of day beers.  Flash to present day when we’ll be lucky to reach 7 degrees.  Regardless of the weather, all March long I day dream about creamy, minty, green milkshakes.  And since we’re talking St. Patrick’s day, might as well throw in some booze too, right?

Not to keep whining about it, I really needed this extra boozy milkshake to get over all of this snow.  I’ve already started day dreaming about warm vacations I could take — something I normally reserve for November — and I think I might give in.  Any suggestions?  I normally head to Florida to spend a day or two at Disney and the Wizarding World of Harry Potter before taking a cruise, but I think it might be time to branch out.  Vegas is always fun, but I’ve found that this is an expensive time of year to travel there and I want to keep it pretty affordable.  Any suggestions?

Light and Boozy Shamrock Shake

If I’m planning a vacation, I better keep my boozy milkshakes light, right?  True there’s vodka and ice cream in this shake, but I really want to consider it mostly banana.  It’s still not a drink-all-day kind of beverage, but it’s way better for you than a drive-through shake even with the alcohol.  I used coconut milk ice cream (actually, I used So Delicious gluten free cookies ‘n cream) and unsweetened almond milk for a vegan treat.

Ingredients
  • 1½ frozen bananas (see note)
  • ⅓ c ice cream of choice (I recommend vanilla or cookies and cream), vegan, light, or regular
  • 3 shots unsweetened almond milk, or milk of choice
  • 1 handful ice cubes
  • 1 shot vodka
  • 1 shot green Crème de menthe

Instructions
  1. Put all ingredients in a blender and blend until creamy. Taste and add additional ice, milk, or ice cream to achieve desired texture.

Notes
To freeze bananas: Peel and cut in half. Place in a plastic bag with minimal air and place in freezer. Cut into smaller pieces and pre-portion to freeze faster.

    Mmm vodka! This sounds great! Yeah we’re supposed to get snow this St. Patrick’s Day lame. I’m ready to pack my bags and get out of dodge, I’m done with winter!

    I think we are getting some sunshine here this weekend…not up to the 70s, but more like…upper 40s. I’ll take it.

    And I’ll take one of these shakes! I refuse to get a shamrock shake because UGH MCDONALDS…but one of these, I could down in no time.
