Barbeque and Veggie Couscous

It’s no secret that I’m in love with barbeque sauce.  I’ll stuff it in a quesadilla, flavor my enchiladas, or make a shredded veggie sandwich.  No shame in my B-B-Q sauce game (sorry for that, so sorry).  It’s probably also not a secret that I’m incredibly lazy and hate going to the grocery store.  Anyone a professional grocery shopper?  I’ll gladly use your services.

What all that adds up to is that I normally end up throwing whatever is left in my pantry together, covering it in barbeque sauce, and calling it dinner.  Some dinners are much less successful than others, but this was a winner.  If it looks similar to my southwest couscous, that’s because I normally have the same throw together ingredients in my kitchen.  The southwest couscous has long been a favorite of mine because it comes together so quickly, so this was an instant favorite for me, too.

Barbeque and Veggie Couscous

I threw in a lot of extra flavors on top of the barbeque sauce like cumin, chili powder, liquid smoke, molasses.  I didn’t want this to taste 100% percent like I was eating a pile of barbeque sauce because plain barbeque flavored couscous is overly sweet.  Unless you use the same homemade barbeque sauce as I did, you’ll probably want to taste and adjust.  In fact, I suggest you always taste and adjust to get everything perfect for your taste buds.

Ingredients
  • 1 bell pepper
  • ½ red onion
  • 3 cloves of garlic
  • 15 oz diced tomatoes, drained and rinsed
  • 15 oz black beans, canned (rinsed) or cooked
  • 15 oz corn
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • ½ tbsp. liquid smoke
  • ½ tbsp. low sodium soy sauce or liquid aminos
  • 1 tbsp. molasses
  • 1 tbsp. Dijon mustard
  • salt and pepper, to taste
  • Vegetable broth (for sautéing)
  • ¾ c barbeque sauce
  • 1¾ c Vegetable broth
  • 1½ c couscous (whole wheat or gluten free)
  • Optional topping: shredded cheddar cheese, nutritional yeast, and/or ranch dressing

Instructions
  1. Heat a sauté pan over medium heat. Add a thin layer of broth.
  2. Rough chop the pepper, onion, and garlic. Saute until soft, adding more broth if necessary to prevent sticking.
  3. Once soft, add all ingredients except the avocado, couscous, and additional broth.
  4. In a separate sauce pan, bring the 1¾c broth to a boil and add the couscous. Remove from heat after about 5 minutes (for whole wheat, use package instructions for gluten free), when all liquid is absorbed.
  5. Stir couscous into the veggies. Chop the avocado and stir in carefully.
  6. Serve immediately and top with cheese or nutritional yeast.

Notes
If making vegan, top with nutritional yeast or a vegan cheese sub.
If making gluten free, opt for gluten free soy sauce (or liquid aminos) and gluten free couscous.

    I went through a serious bbq sauce phase in college but haven’t been that into it since…it might be time for a revival!

    Great Odin’s raven, that looks delicious! Almost like a deconstructed BBQ/taco salad, except you skip the lettuce (smart girl) and go straight for the gold with that scrumptious couscous!

    Also, we must be BBQ sauce twins because… I am a lover of it, too!

    This looks delicious! I love BBQ sauce too. I had a burrito on Friday that was tofu with BBQ sauce – YUM! Have a good Monday 🙂
