Oatmeal Breakfast Cookies + MyOatmeal.com Review

What the what?  This was supposed to post on November 20th and for some reason didn’t.  (Thanks WordPress, for never alerting me to this fact?)  After my vacation, I was too busy playing catchup to notice.  It’s now a month late , so I feel extra bad about never posting a review after the people at MyOatmeal.com were so kind to send me tasty oats to sample.  Rather than delay it longer to re-write the post, you can all see how excited I was about my vacation before I took it, ha.

Greetings, everyone! I’m probably in Jamaica today or on a big awesome ship, but I couldn’t leave you without a post.  The wonderful people over at MyOatmeal.com sent me some delicious oatmeal to review.  Since I’m apparently bad at being a blogger, I’ve been eating and enjoying this oatmeal but forgetting to share this delight with you.  They sent me three bags which I built myself using their “build your blend” feature, so I’ll be reviewing each of those separately.

Oatmeal Breakfast Cookies

You know I can’t just review a product as-is.  I always like to eat something plain and then transform it to be even more amazing.  My first bag was of Graham Cracker Berry blend (creative name, I know) which started with the signature smash blend of oats (instant, steel cut, 5 grain oats, and flax) flavored like graham cracker crust and speckled with dried strawberries.  I don’t know about you, but that mix was just screaming for some peanut butter, so I whipped this into a breakfast cookie with a dose of peanut butter.

I got 3 small (1 pound) bags of oatmeal for around $30 with shipping.  The price depends a lot on what you put into it, but it’s always going to be more expensive than buying a plain bag of oatmeal at the store.  If you like to get creative with your flavors, MyOatmeal.com offers incredible variety and customization that you aren’t going to find anywhere else.  Plus customer service is amazing!  When you’re on the site, there’s a button that comes up on the bottom of the screen to chat with the CEO when he’s in the office to get ideas for flavors – I thought that was beyond awesome!

Oatmeal Breakfast Cookies

Ingredients
  • 1 banana, mashed
  • ½ c peanut butter
  • 1 c sweetened signature smash blend from MyOatmeal (see note)
  • ½ c white whole wheat flour, or any flour of choice
  • ½ tsp baking soda
  • 2 tbsp unsweetened almond milk, or milk of choice

Instructions
  1. Preheat oven to 350ºF and prepare a baking sheet with nonstick spray or parchment paper.
  2. Mash the banana and combine with the peanut butter, microwaving for 15 – 30 seconds at a time, if necessary, to thoroughly mix.
  3. In a separate bowl, combine oats, flour, and baking soda. Stir in peanut butter mixture and milk.
  4. Divide into 8 cookies – they will be sticky! Shape like hockey pucks, pressing the dough together to encourage sticking.
  5. Baking for 15 minutes.
  6. Let cool and enjoy! The variety of oats gives this a great texture!

Notes
If you don’t have oats from myoatmeal, this will work with ½ c minus 1 tbsp of steel cut oats, ½ c minus 1 tbsp quick oats, and 2 tbsp flax. Sweeten to taste (as much sweetener as you would add if preparing the same amount of oatmeal). This will have more of a peanut butter and banana flavor, as there will be no additional flavoring from the oatmeal to fall back on. I recommend adding a scoop of flavored protein powder or a few shakes of cinnamon and nutmeg.
The flavor of this cookie can vary greatly based on which flavor you choose – I recommend graham cracker, cinnamon roll, chocolate hazelnut, or vanilla frosting.
If you don’t have any mix-ins in your oatmeal, you can throw in some dried fruit or nuts. I loved the dried strawberries in this.
If you don’t get your blend sweetened, add as much sweetener as you typically would to a cup of dry oatmeal – more if you want your cookie sweeter. I liked keeping this more oatmeal tasting than cookie.
