Bell Pepper Pesto Melts

I’m not feeling well and had an all around bad day, so I’m going to get right to the point.  Remember the pesto from Wednesday?  This sandwich is one of the many delicious outcomes of that pesto.

Basil Pepper Pesto Melt

This recipe is verrrrrry simple and comes together quickly if you already have pesto on hand.  Sometimes, I use frozen bell pepper rings and make this recipe even quicker by avoiding cutting any veggies.  If you want a bulkier sandwich, you can hollow out the bread and add mushrooms, onions, and veggie (or regular) crumbled sausage.  Sky’s the limit.

I used to make a sandwich very similar to this when I was in high school.  The idea was sparked from some sort of Weight Watcher recipe.  Ten years later, I can’t remember if it was from a cookbook or if a friend learned it at a meeting, or I would cite the original version.  All I know is it’s delicious and you should make it ASAP.

Bell Pepper Pesto Melts

Ingredients
  • crusty bread of choice (I recommend using a baguette or small ciabatta rolls)
  • 3 peppers (I like to use 3 different colors)
  • 3 cloves garlic
  • salt and pepper to taste
  • 4 tbsp pesto
  • ½ c mozzarella

Instructions
  1. Turn your broiler on high.
  2. Cut the crusty bread into desired size and set aside.
  3. In a saute pan, heat a thin layer of water until near boiling. Add garlic and peppers. Cover, stirring occasionally, until soft. Season with salt and pepper.
  4. Drain peppers and set aside.
  5. Spread 1 tbsp of pesto on the bottom piece of bread. Top with peppers and sprinkle with 2 tbsp of cheese.
  6. Broil until cheese is melty and serve.

Notes
For a larger sandwich, add mushrooms, onions, veggie sausage or greens.
For a GF sandwich, use GF bread.
Nutritional info with vary based on bread choice. Sandwich can be served open face.

    Oh no! Sending hugs!

    This sandwich would probably make me pretty happy though. Pesto and melted cheese have that effect on me!
