Coconut Curry Fudge Pops (Vegan)

For as lazy my last weekend was, this one was 3 times as busy.  Between my friend’s bridal shower (and preparing for the bridal shower) and another friend’s going away party the same day, I never got to sit down on Saturday, after staying up late on Friday night.  Everything was a lot of fun, but all day Sunday I just wanted to bond with my couch and cuddle my cats.

Remember how I’m a terrible impulse shopper.  While I was buying a million pounds of sprinkles, I also just had to buy an ice pop mold.  I had no idea what I was going to do with it, but I had to have it.  After I finished inhaling my coconut curry Theo chocolate bar (Giving some away here!), I kept dreaming about the flavor combination and wanted more.

In case you’ve never tried it, let me tell you that almond milk + freezer = disaster.  It needs to be diluted with something or it gets hard as ice and has a strange crystalline structure.  Hello creamy, amazing coconut milk!  The result?  A fudge pop that is so rich and tasty, with a little kick of curry.  Bonus points for tasting like Theo chocolate bars.

Because coconut milk solidifies at a low temperature, these come together much faster than a juice or regular milk based ice pop.  About 3 hours in the freezer and these were good to go.  Plus, they’re vegan!  If you’re looking for a more traditional fudge pop, just leave out the curry powder.

Coconut Curry Fudge Pops (Vegan)

Ingredients
  • 1 can coconut milk (regular or light)
  • ⅔ c unsweetened almond milk (or other milk choice)
  • 2 tbsp cocoa powder
  • 1 ¼ tsp curry powder
  • 4 – 5 tbsp agave nectar, to taste (or sugar)

Instructions
  1. Shake the can of coconut milk well before opening. If there are any solids (from a lightly cold room), microwave in 20 second intervals until melted.
  2. Add powders, sweetener, and then the almond milk, stir well until combined.
  3. Pour into ice pop molds – this will fill about 12 molds with ¼ c each. Add the sticks and place in the freezer
  4. Freeze for at least 3 – 4 hours. You may need to dip the molds into hot water for 10 seconds or so to pull the pops out more easily.

Notes
If you opt for regular sugar, you’ll want to heat the liquid a little more to dissolve the sugar or you may get a grainy texture.
Nutritional information is using full fat coconut milk. Depending on the brand, using light can save 20 – 40 calories.
If you’re looking for a more traditional flavor, leave out the curry.
I haven’t tried this recipe using cow’s milk, so I’m unsure of the result. Please let me know if you try it and have any problems or successes.

    I am seriously intrigued by this combination. Usually thinking about curry gives me goosebumps, but the fact that it’s buried beneath layers of chocolate and coconut milk makes me feel safe and comfortable. Waaaant.

      You could always try it with half the curry, ease yourself into it 🙂 It’s definitely not a flavor for everyone, I know my sister wouldn’t touch curry if her tastebuds depended on it.
