Slow Cooker Black Bean Tacos

First off, if you missed Wednesday’s post, be sure to go back and enter to win some seriously delicious chocolate!  We’re quickly approaching the time of year when I get too lazy/hot to cook.  Okay, maybe there are times year round when I’m too lazy to cook, but when it gets warm I can’t be bothered to do much of anything.  Enter the slow cooker.  I’m sure everyone is aware of the amazing powers of the slow cooker, so I won’t try to sell you on it.  Just throw everything in and come back later for a tasty dinner.

I find it hard to define a #1 favorite food, so I’ll just say that tacos are always in the top three.  One of my mantras is “Always say yes to tacos” and it’s never steered me wrong.  My current favorite are TVP tacos (coming soon, likely with another giveaway!), but black bean tacos are a good whole foods way to nom on my favorite noms.  Yeah, I’ll probably say nom like 20 more times this post – it’s just the way I eat tacos, I om nom nom them. [Will someone make me a shirt that says “I om nom Tacos”?]

If you’re feeling particularly lazy mid-summer, you could just throw in a few teaspoons of taco seasoning and some dried minced garlic.  I’m not quite there yet so I took the time to balance the seasonings just the way I like them.  If you’re not feeling tacos, these make a great refried bean-type of side – just add a little extra water and mash.

Slow Cooker Black Bean Tacos

Serves: 6
 

Ingredients
  • 2 cans(15 oz) black beans
  • 8 oz can chopped green chiles (I used 2 cans, 4 oz each)
  • 1 onion, minced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 2 tsp cumin powder
  • 1 tsp oregano
  • ¼ c water
  • 12 taco taco shells (for a GF option use corn)
  • Your favorite toppings (I always, always recommend sour cream)

Instructions
  1. Spritz slow cooker with nonstick spray and add all ingredients. Mix well.
  2. Cook on low for 6 – 8 hours or high 3 – 5 hours.
  3. Once the beans are your desired level of falling apart, divide between the 8 shells and top.

Notes
This recipe can easily be cut in half, just make sure your slow cooker isn’t too large, as you may get burnt spots.
If you want something more similar to refried beans, add a little extra water and 1 – 2 tsp olive oil (if desired) and mash lightly.
Serving size is 2 tacos

    I love these, tacos are my favorite, and I’m totally fine just going the black bean route. I always had a bunch of cilantro on top, can’t have it any other way!

    LOVE LOVE LOVE tacos!!! And burritos and anything with rice and black beans. These look so good. I love my slower cooker and haven’t tried anything like this. Looks easy and delish! =)

    I love tacos, but aside from the one time I was a veggiesaurus and got a refried bean taco at taco bell, I haven’t really delved into meatless ones. This looks like a good start!

    I have got to get a slow cooker. I always order black bean tacos at Chipotle and your recipe looks scrumptious.

    I was at Whole Foods the other day checking out the Theo bars. They didn’t have Monkey Bars or Coffee and Cream, my two top choices. They must be popular!

      Yes, you NEED a slow cooker! It’s such a life saver in the summer.

      I know for a fact if I saw Monkey Bars in a store, I’d buy all of them without blinking an eye. 🙂
