Low-fat, Butterless Cinnamon Chip Scones

I know I was MIA again on Monday.  I promise I’m not being flaky on purpose!  After being sick all of last week, I went to Chicago for the weekend.  I definitely wasn’t 100% ready for that adventure, but I’d agreed over a month ago to go to this Chive meet up with Josh, so away I went.  We rented someone’s apartment for the weekend so we could feel a little less like tourists and went one some tasty food adventures in our free time.  If you’re ever in Chicago, I highly recommend The Chicago Diner or The Peasantry.  The first is all vegetarian and vegan!  The second also had meaty options but had a huge selection of vegetarian options.  Plus, triple truffle fries that are crazy amazing.

Thursday night, I needed to throw together some healthy car snacks for the 5 hour drive.  I’ve always been a sucker for a scone.  They’re not only tasty, they’re also so freaking cute.  I always thought scones would be really hard to make until I saw them popping up on blogs left and right.  My confidence was building, but they all involved cutting butter into the dough.  That’s way more work than I want to do, plus then my homemade scone is now full of butter and fat.  I knew there had to be a better way to get a butter flavor and a light scone texture – and I knew I could be the one to do it! Even better: these use ONE bowl and come together in just a five minutes.

My favorite, favorite scones are cinnamon chip.  I bought cinnamon chips a long time ago thinking about those scones, not knowing what I’d do with them.  They’re not the healthiest chip, but I cut down on the amount I used by chopping them really fine.  If you’re not down with store bought cinnamon chips (the brand I bought isn’t vegan), I bet you could find a recipe to make them yourself.  Another idea would be pulverizing Red Hots into tiny pieces, but they might get a little chewy.  Worst case?  Swap out for chocolate chips or butterscotch and you still have a tasty scone!

Low-fat, Butterless Cinnamon Chip Scones

Ingredients
  • 1 c white whole wheat flour
  • ⅓ c oat flour
  • ⅓ c brown sugar
  • 2 tsp baking powder
  • ⅛ tsp salt
  • ⅓ c unsweetened applesauce
  • 2 tbsp fat free Greek yogurt (regular/vegan yogurt, sour cream or silken tofu will work)
  • 4 tbsp vanilla almond milk (or milk choice with splash of vanilla extract)
  • 1 tsp butter flavor
  • 2 – 3 tbsp cinnamon chips, finely chopped (swap out for other flavors)

Instructions
  1. Preheat oven to 400° F. Line baking sheet with parchment paper.
  2. Whisk together dry ingredients. Add applesauce, yogurt, milk, and butter flavor and stir until almost combined. Add chips and stir gently to incorporate. Dough will be sticky!
  3. Turn the dough out onto the parchment paper and shape into a circle, about 6 – 8 cm in diameter. Using a sharp knife (I spritzed mine with nonstick spray), cut into 6 pieces – do not pull apart!
  4. Bake for 20 – 25 minutes, until a toothpick comes out clean. After the ten minute mark, you might want to pull your scones out and re-cut to ensure they cook properly.
  5. Allow to cool completely before serving (at least one hour, I found they tasted better the next day)

Notes
If you want it a little sweeter, mix up some icing using unsweetened almond milk, a drop or two of vanilla, and a little milk. Drizzle with icing once they’ve cooled.

    A light scone is one my list to make. Love that you didn’t use butter. I just happen to have some cinnamon chips too. They are soo good. The butter flavoring is a great idea. I ordered some last week so hopefully it will arrive shortly so I can make these.

      I love the taste of butter, but butter definitely doesn’t love me! Butter flavoring is going to be your new best friend, trust me. It’s amazing.

      They’re usually nestled in with the chocolate and butterscotch chips. Hersheys makes a variety of them, but I’ve seen some grocery stores with a store brand, too.

    Chicago is a great city. If it wasn’t so cold in the winter, I would move there. These scones look dense but in the best way possible and the cinnamon chips add a nice touch of heat.

      The edges are a little crumbly, but the inside is very much like a denser muffin. The applesauce and yogurt help to keep it nice and moist.

    This recipe looks amazing! Sort of like Irish soda bread. I’ve never baked with tofu. Have you have good results with it?

      Silken tofu wouldnt be my #1 recommendation. For a vegan option, I’d say look for a soy or coconut milk yogurt. Where I live, I can’t reliably find those so I’ve used silken tofu (mori-nu, specifically) before in recipes where yogurt or sour cream would go. I definitely wouldnt suggest using it in a recipe that calls for 1/4 c +, but the two tablespoons here will work well. If you can smell the tofu in the dough, you might want to add a little vanilla extract, but the applesauce should really cover it up.
